Its finally happening ,the world is warming up. Fresh summer salads are on our minds! This is a summer salad must have that is easy to make, tastes delicious and is ready in minutes! You can eat this salad plain, serve with tortilla chips as a dip or add to a pita! Its fresh, versitile, and pack with protein! What’s not to love?
What You Need:
1 can Organic Black Beans - rinsed and drained
1 1/2 Cup Fresh Corn or organic frozen corn
1 Tbsp Olive Oil
1 Tbsp Organic cane sugar
1 tsp Salt
1 1/2 cup Organic cherry tomatoes
1 Red Onion
1/2 cup Cilantro
Let’s get started:
Empty the black beans into a strainer and throughly rinse them. Shake off excess water and set aside to dry. In Large bowl add thawed frozen corn or cut fresh corn. If you are using fresh corn cut off the cob, it is ok to keep the clumps of corn together.
Chop the cherry tomatoes into thirds. When chopping remove excess seeds and juice from the tomatoes. Add them to the bowl.
Slice the avocado down the center. Remove the avocado with a spoon and remove the pit. Chop the avocado into small chunks. Add to the bowl.
Chop the red onion into small pieces. Add to the bowl.
Toss all ingredients well.
Add 1 tablespoon of sugar, 1 tsp of salt, 1 Tablespoon of Olive Oil onto the salad. Mix well.
Add the juice of 1/2 lemon and garnish with cilantro. Serve cold.
