The mashed potato pancake is a variation of the classic potato pancake. This is not an elegant or extravagant meal item but it is melt in your mouth delicious! The mashed potato pancake is great for left over mashed potatoes and is a quick and easy recipe to add a new spin on an everyday meal item!
What You Need:
Mashed Potatoes (prepared) - Aim for at least 2 cups
1 large egg
1 cup pancake mix or Flour
3/4 cup milk
Let’s Get Started:
First add mashed potatoes to a large mixing bowl. Pour in pancake mix or flour and milk. Mix until it reaches the consistency of cake batter. Add 1 large egg. Stir to same consistency. Add more milk or flour until you reach a cake batter consistency.
Heat oil in a skillet. I prefer to use coconut oil. Once oil is hot, add a spoonful of the batter. Brown on one side and flip. Repeat this process until your batter is gone. Add butter and salt to taste! Enjoy!
Makes 15 - 20 pancakes.
